SUBSTITUTE LIST:
Offer versus Serve (OVS) is a provision in the National School Lunch Program (NSLP) that allows students to decline some of the food offered. The goals of OVS are to reduce food waste in the school meals programs while permitting students to decline foods they do not intend to eat.

Choice Lunch has made Offer vs Serve easier to oversee. All entrees fulfill 2 of 5 meal components. An entree combined with a fruit/vegetable equals a complete meal for our students!

Set Up:

*Attach 4/5 stickers to the cork board and place on first table, before trays

*Set out all 4 tables into L shape, 3 parallel to the wall, 1 by the end of lunch pickup line.

Take Down:

*Count remaining milk, fruit, and vegetables

*Return leftover entrees to the cooler or oven.

*Stack all the bins on top of the milk cooler: condiments, snack, supplies, bag with brown trays

*Roll cool cambrio and cooler against wall, OK to leave oven in closet or against the wall

*Fold tables and lean against wall

*Move the left over lunches back to either cooler or warmer. Place the wamer and cooler next to the blue cooler against the wall

*Take the share bin to student eating area so they have easier access. Items in the share bin are available to all students

Please remember:

*Cheese sticks must be removed from the fruit/veg trays and served by the snacks.

*Do not place any food or other supplies on the floor.

• Water cannot be in the milk cooler because it is not one of the 5 food components

*The supply box should not be within student reach

*Try to remember to wear the gloves from the SUPPLY box.

*Gloves are required when serving pizza - please put on a new pair if you touch anything other than pizza!

*It is recommended that hair be tied back during lunch service, it is required that hair be tied back when serving pizza
